Remember these?

Well they are PERFECT for making mini pizzas. And you don’t have to hassle with making your own dough. Since I had 3 pieces left from making Butter Chicken I decided to make a Meatball Margherita, Greek, and Thai Chicken Pizzas! MM, G, TC! And Yes, I am an overachiever…all three made in one night. =P


Thai Chicken Pizza
1 tsp Oil
2 Boneless Chicken Thighs, 1-inch cubes

2 tbsp Peanut Butter
1 tbsp Soy Sauce
1 tbsp Curry Powder
5.6 fl. oz. Coconut Milk
1 tsp Salt
1/2 tsp Pepper
1/4 C Peanuts, coarsely chopped (garnish)
1 Scallion, chopped (garnish)

Combine everything but the chopped peanuts in a small saucepan. Stir over medium heat until completely combined. Set aside.

In a small saucepan, saute chicken in oil until white on all sides. (It will continue to cook in the oven.)

Preheat oven to 400F. Place cooked chicken on top of naan and drizzle sauce over the chicken. Sprinkle chopped peanuts on top. Bake on a sheet pan in oven for 15 minutes. Sprinkle with chopped scallions when done.


Greek Pizza
4 oz Gyro Meat, cut into 1-inch pieces
1/4 Onion, sliced
1/2 Tomato, sliced
2 oz Feta Cheese, diced

Other than the above, no more to prepare for this one. =] Place tomato slices on the naan,  then onions, gyro meat, and then sprinkle feta over all of it.

Bake on a sheet pan in oven for 15 minutes or until gyro meat is crispy.


Meatball Margherita Pizza
6 Meatballs, cut in half
1 tomato, diced
2 Roasted Garlic Cloves, minced
1 tbsp Olive Oil
1 tsp Salt
1/2 tsp Pepper
6 Large Fresh Basil Leaves
5 Slices of Fresh Mozzarella

In a medium pan, saute diced tomato in Olive Oil, salt and pepper on med-high heat. After 10 minutes, add minced Roasted Garlic and meatballs. Cook for another 15 minutes, or until tomatoes are reduced to half their size.

On a piece of naan, place tomato and meatball mixture, then basil leaves and then mozzarella. Bake on a sheet pan in oven for 20 minutes.
