I love making pasta because it’s so easy. It’s definitely my go to dish when I can’t think of anything else to eat. =P
Creamy Chicken Pasta
1 lb Chicken Breast, 1-inch cubes
2 C Whole Milk
1 TBSP Butter
2 TBSP Flour
2 TBSP Salt
1 TBSP Pepper
1 TBSP Garlic, minced
1/2 lb Pasta of Choice (I used Linguine)
1 TBSP Olive Oil
Boil Pasta according to directions on package.
Toss Chicken in 1 TBSP Salt and 1/2 TBSP Pepper until evenly coated. Set aside.
Melt butter in a medium saucepan.
Add Flour and stir for 2 minutes.
Add Milk and stir until flour/butter mixture is completely dissolved. Let simmer over med-high heat until thickened and coats the back of the spoon (~15 min).
Add 1 TBSP Salt and 1/2 TBSP Pepper and stir.
Heat Olive Oil in a medium pan.
Add Chicken and minced Garlic and saute until cooked through.
Put chicken and drained pasta into the saucepan with the sauce and toss over low heat until thoroughly mixed.
Enjoy with roasted vegetable of choice. =]
