Whenever I make Cali Rolls, I’m always left with leftover avocado, cucumber, and crabstick. Like copious amounts of it. What do I do with it you ask?

Wasabi Dressing Salad!

6 crabsticks, thawed and separated
1 avocado, sliced
1/2 cucumber, julienned
1/2 C Vinegar (I used brown rice vinegar)
1 TSP Salt
1/2 TSP Pepper
1/4 C Mayo
2 TBSP Wasabi Powder
2 TBSP Sugar

Place Crabstick, Avocado, and Cucumber into a large bowl.

Add everything else, mix thoroughly with your clean hands and chill in the fridge for at least 30 minutes. Serve chilled.
(Salad lasts ~1week in the fridge so enjoy!)
